Tomatoes that have not fully completed the ripening period are stored at 80-85% humidity conditions between 8 and 10 degrees. It is kept under these conditions for up to 1 week.
Semi-ripe tomatoes are stored between 12 or 15 degrees, in 85-90% humidity conditions. It continues to mature under these conditions. Storage period lasts up to 3 weeks. Storage at 13°C for more than 2 weeks may also cause abnormal deterioration without flushing. They must be careful these conditions. It should occur without deterioration at 14 or 16 degrees Celsius and fully mature within 14 days. Below 10 degrees, the tomatoes will rot. Tomato rot occurs between 6 or 9 days.
Ripe tomatoes are more resistant to low temperatures. Ripe red tomatoes are stored at 7 degrees for several days. Lower temperatures cause color loss, shorten shelf life and deteriorate product quality.
