Broccoli, which can be stored in cold storage, cooling or freezing storage forms, is most commonly stored in cold storage. The storage temperature should be 0 degrees and the humidity level should be 95%.
If broccoli is to be preserved by freezing, then damaged, yellowed and flowering sections from insects should be extracted and treated as such. It should also be boiled in hot water for 3-4 minutes to preserve the aroma and color. This halts enzyme activity. Freezing is done with tunnel freezers. Frozen broccoli can maintain their quality for up to 10 months when stored at -18 degrees. If stored below -18 degrees, it loses its bright green colors. When storage is done at -23 degrees, it is possible that they can stay of quality for more than 1 year
