Cheese has to go through the maturation stage while being produced. Maturation times are 3-10 months for hard cheeses; 5-10 weeks for semi-hard cheeses; It takes 3-6 weeks for soft cheeses.
Temperature and humidity play an important role in cold storage for preservation purposes. There is a great difference in durability between cheese groups when cheeses are stored while preserving their quality.
Temperature Ratings and Storage Times of Matured Cheeses
The relative humidity required during the maturation stage is 75%-85% in fresh hard and semi-hard cheeses, and 80%-90% in old hard and semi-hard cheeses.
