Coconut, which can be stored for 1-2 months at a relative humidity of 80-85% in the range of 0-1 degrees, experiences problems such as mold growth, weight loss and drying of the milk inside during storage. Weight loss can be avoided by applying a paraffin coating or by using polyethylene packages. Fresh coconuts are easy to store, but mold will occur if the humidity level is too high. It can be stored in fresh as well as dried form. For short-term storage of dried or freshly grated product, a temperature between 18-21 degrees and 50% relative humidity are required.
